In its second edition, the event to be held between July 1 and 6, which brings together 14 Puerto Montt restaurants, is shaping up to be the most important in Chile dedicated to the star product of national aquaculture.
After a first version that successfully brought the gastronomy of Puerto Montt around salmon, more than a dozen restaurants in the capital of the Los Lagos Region are preparing for the second Gastronomic Week of Salmon. From July 1 to 6, 14 restaurants in the city will offer various gastronomic proposalsespecially prepared for the occasion, about the qualities of salmon. The aim: to promote the consumption of this product, already emblematic at regional and national level, valued by the community as well as by the large number of tourists arriving in the area.
The central idea of the initiative is that each outlet presents three dishes based on this fish, among which are apple ceviche, salmon with nutcrunch and rosehip sauce, breaded roulade with cochayuyo or salmon chupe, among other creations developed by each restaurant, with the advice of the International and Traditional Chilean Gastronomy career of the Santo Tomás Puerto Montt Technical Training Center.

In addition to each culinary proposal, which will have special prices to encourage the consumption of each dish, the event will be accompanied by artistic activities that include live music in the different dining areas, joined by a display of local painters, to create a celebration atmosphere with a strong cultural touch around the product, thus merging with regional creativity.
The participating restaurants in this edition are: Abba Presidente Suites, hotel Ibis, Cirus Bar, Di Nocetti Restaurant, Don Papi pastry shop, Gusto Sureño, Hotel Courtyard by Marriott, Los Navegantes, La Magia de Alicia, La Rinconada, Rincón de Adela, Tablón del Ancla, Palafito Bar and Costa Nostra.
The Salmon Gastronomic Week is part of a long-term strategy with an ambitious goal: to position Puerto Montt as the world capital of salmon, not only in its productive dimension, but also in its gastronomic and cultural sphere, highlighting the local arts that have been generated around the product, almost half a century after its introduction on an industrial scale in the region, as well as a way to promote tourism. and the economy of the area.
The activity is part of the work of the DALCAS project, which seeks to put in value the local gastronomy and products of the region, within the Patagonia Costa plan, financed by the Regional Government of Los Lagos, through the Corfo Bien Público Program and with support from SERNATUR, the Tourism Directorate of the municipality of Puerto Montt, the Chamber of Commerce of the city and SalmonChile.
Behind this initiative is a concrete commitment of the nine partner producing companies of SalmonChile — MultiX, Camanchaca, Blumar, Australis, Marine Farm, Salmon Austral, Ventisqueros, Yadrán and Cooke Chile — who for the second consecutive year will deliver salmon for free to the restaurants that have joined this second version of the week of salmon, allowing them to offer preparations with salmon of the highest quality with the which will be made free tastings for the customers of each place.
