Various restaurants and canteens in Puerto Montt are preparing to celebrate, between August 7 and 11, a day with offers and preparations based on a product relevant to local cuisine. An activity complemented with cultural and artistic actions that start with a tasting in the city's main square.
Puerto Montt will experience days of special flavor between August 7 and 11, with the first version of the Salmon Week, an event that promises to stimulate the taste of the capital of Los Lagos. For five days, top restaurants and local eateries will offer a varied selection of dishes made from salmon, with special attention to a traditional recipe: the popular cancato.
The event is organized by the Dalcas Patagonia Costa Community Table and the Tourism Department of the Puerto Montt City Council (DITUR), supported by Salmón de Chile and the Patagonia Costa Public Good. It will all start with a launch in the Puerto Montt Plaza de Armas on 7 August, from 12:00 hours. There, visitors will be able to enjoy a gastronomic sample with free tastings, live presentations and the opportunity to learn more about the versatility and quality of this fish, which has been present in the region for more than four decades.
The restaurants and venues participating in this celebration are: Adela, Don Papi, Tablon del Ancla, Hotel Abba, Cirus Bar, La Rinconada, Gusto Sureno, Di Nocetti, La Magia de Alicia, Fish & Chip's and South Wind. Each of these establishments will present their special menu, in which salmon will be the protagonist. Apart from a selection of each dining room, chefs have been inspired by the tradition of cancato, a typical dish where fish is baked stuffed with cheese, longanizas and other ingredients. This fusion of tradition and culinary creativity promises to be a unique experience for those who visit each place.

“It is a boost both to the participating dining rooms and restaurants, while our search to break seasonality with events, which in turn enhance products that have a constant presence in the cards of our city. It also highlights the validity of a traditional dish that, thanks to this fish, has been revitalized as a recipe,” says Marcelo Wilson, director of the DITUR de Puerto Montt.
Frederic Emery, chef who is part of the organization of the event, stressed that “we are very happy, as a communal table Dalcas Patagonia Costa, to be able to organize the first week of salmon here in Puerto Montt, since the reception by the restaurants has been excellent. We count on the support of the Municipality of Puerto Montt and from Salmon from Chile We will receive more than 200 kilos of salmon, we will have trainings, tastings and hopefully this will be the beginning of a date that will stay in the commune forever.”
In parallel, various activities have been planned, in the same premises, which will include artistic presentations, live music and talks about the importance of salmon in the diet and the local economy. These activities are designed to complement the culinary experience and offer attendees a more complete view of the product and how it is settling in the gastronomic environment of the city.
In addition, as part of the special activities of the Salmó Weekn, there will be a Field Day. This activity, aimed at the participating canteens, will include visits to salmon companies in the region. Attendees will have the opportunity to get to know closely the salmon cultivation and production process, thus strengthening their knowledge and the possibilities of the resource.
Specialized training in cancato-inspired dishes has also been organized for professionals with the aim of improving recipe preparation and presentation techniques.
